But there is a point where the coffee bed is perfect and when you overpour you kill it and if you underpour settling sets in and the loft is gone.
I generally don't do a pulse pour, other than a bloom or two half-blooms in the beginning. But I'd still say you can pulse w/o overpouring or allowing too much settling. Why one would want to, I don't know.
The correct amount of agitation to maintain sufficient exposure of the maximum amount of coffee particles to the most water at the appropriate temperature is (in my mind) what we're after.That may be a written goal worth refining, which would then determine how we want to pour.
