Working good, I just need to remember to drop the voltage down when the Behmor hits the cool cycle so the voltage doesn't jump up too high.
I forgot to do that on my first Behmor roast too - but here is a better idea. I dial the variac down to 115v once first crack starts. No need for full power at that point, since the beans are generating their own heat ...

You did fine. Looks like you got a nice Staco. And the knob didn't get smashed!!! Working with a panel mount is  8) er. A couple times I've seen the motor driven staco reasonable priced on ebay, ultimate  8)

It would be perfect small project for Arduino + stepper motor.
If only there is only enough disposable time to spend on things I would love to do…
