RE:  Synesso.  One of the best macchiatos I have ever had was in the Twin Cities.  The barista knew what she was doing.  She knew the machine -- a Synesso.  She talked about it as if it were her own child.

So if one were bold enough to dream of owning a Synesso one group where might he direct his fairy godmother to buy one for him?  Really, who sells 'em in the eastern US (NJ)?

If you email Synesso directly they will get back to you within around 24 hours or you could call. I would guess you live in a large enough area that you would have a distributor they will point you toward, but if there is no local distributor you can purchase directly through them. They are by no means cheap, but in this case you get what you pay for.

The person's name is definately Skyler.
Here's a quick list.
1. lie about inventory
2. lie about machines being ready.
3. lie about work that was done.
4. no support after promised support with purchase.
5. repeated promises to show up and no show.
6. taken payments and not produced promised product.
etc etc etc

Let's keep it simple for those of us that aren't hydraulic or pneumatic engineers.

1.  What is a paddle in an espresso machine?
2.  What purchase does it serve?
3.  Is it the bee's knees?
4.  Why doesn't every machine have one?  Cost prohibitive?

Paddle allows you to manually control pre-infusion as well as shot time on the otherwise volumetric water dosing GS/3. On the GS/3 and Synesso one click to the side is line pressure pre-infusion and two is active pump pressure for extraction. When you have the paddle on the GS/3 you can control the shot and do not have to use the volumetric water dosing buttons.  The Synesso either comes with a paddle or volumetric dosing buttons, not both. Plus the paddle looks super cool!

There is a 1-group Synesso Cyncra for sale in Boulder for $7k asking price. It is a 2011 model. John should buy it :) .
