It's neat...I wish the video had more of a "how-to" feel, because i don't really grasp what it was getting at in regard to how it controls steep time and things, but I saw some Watlow PIDs...

Interesting to say the least.

That is a cool design. There is one problem with how you steep tea in it though. A lot of the aroma and taste characteristics, as well as active medicinal constituents in a lot of teas diminish if it the tea not covered while steeping. With that said, I am sure you could come up with a simple lid for the brew chambers to remedy that problem.
