Only half way to the price of the K10 or K8 - might be something to shoot for - just roll the dice and hope the program stays intact and the grinder remains available for another 3 or 4 months.

You'll be glad you did!

expy98 thinks you should save up after that for a Vivaldi.   ;)

I was one of the 'none of the above.'  Rationale:

SJ is a wonderful machine but a beast to have sitting in the kitchen.  Blows the 'wow factor' for me.  Great coffee but is the ugly brother.  I have had coffee from Peter's Compak 10.  Not only is it a superior grind, it is aesthetically appropriate within the kitchen setting.

I know that your points are burning a hole in your virtual pocket, Eric :), but have you considered the size of these grinders?  I have an LSM80 that I bought for a song, cleaned it up and replaced the burrs ($50) and it is a workhorse, but I'm limited to where I can put my espresso setup because it is so tall. If I take off the hopper it will fit under the kitchen cabinets, but I would have to pull it out to put beans into it. So, I have my stuff set up on a mobile island off to the side of the kitchen. It works, but it's not close to the sink.

Just another consideration :)

can you use the credits toward the K10's bean hopper and grind tray to start?
Or if you could, make up the other half w/ cash if time is a concern.

May offend some but once I got the Pharos, there is no way no how I'd ever use a SJ-class grinder again.
The day I got the Pharos, I never pulled another shot w/ the SJ, it was that obvious.
Perhaps telling of my  lack of mad skillz but for the 2 years that I've owned the SJ, I don't need to remove my socks
to count the number of times I've had pours that are worthy of youtube.  It's the complete
opposite w/ the Pharos; it's rare that I get imperfect pours and even those are substantially
better looking than the better of the SJ shots.  And since the burrs are same as the K10's,
that's what I'm basing my opinions on.

Peter is saying grinder first (K10) then machine (Vivaldi).  If I was to choose today, perhaps Strega?

Or for a few hundred more you could get a Bosco ;) !

Edit: Whoops. Somehow I mix up the Strega and Izzo Pompei in my mind quite regularly. . . .

I wonder if they will end up offering these machines?  That would really be worth rolling the dice for.  I like the La Pavoni (in reach as we speak) but one of these other levers is certainly an upgrade from what i have read.

I have pulled a couple shots with a La Pavoni and thanks to a decent instructor the shots were very nice - I understand the appeal of this method much better now.

I'd draw the conversation back to the K10.  As expy98 cited, and have many others, there is a distinct difference between the large conical and flat burrs.  If you can wait a bit on the grinder, it will pay dividends both in your current machine and when you manage the Bosco or Strega.

How's single-dosing with the K10? Just curious. Eric, I'll race you... ;) (kidding, though I do have about $550 worth of eBeans currently)

It requires sweeping the ~1" horizontal chute between the grind chamber and doser.  I use a trimmed Rubbermaid spatula.  The doser sweeps fairly clean.  Mine comes very close to putting out the same amount that goes in, but I admit I'm not that anal about dosing weights; I aim for 15g, and feel that a tenth or two either side is fine.
