Where to buy...

I'm looking into buying a coffee sieve. I've looked on the web and I'm not sure what size I'm looking for. I will use it with my virtuoso grinder and v60 pourover. Seems like im getting a lot of fines and wanted to mess around with one. Can someone steer me in the right direction?

I'm also hunting a variac to work with my behmor. I got a voltage meter and my voltage is all over the place during the day. I saw some on ebay, some are cheap others are pricey whats the difference? Again can someone steer me in the right direction?!

Variacs.  Your Behmor draws 15A so you will want one rated at 15A or higher.  Don't buy a $100 red Chinese one.  They are junk.

If I knew where to find a sieve stack like they used when I was fracking that would be ideal...they'd use a stack with 8 or so sieves to separate the sand with screen sizes ranging from 20 to 100.  Somewhere between those is where you're looking I would think.  100 mesh sand is finer than Turkish grind...
