John, that was a bit of snark there with the sifter I believe.
It's like a super combo swiss gold / pour over / french press.
Change the drip rates is a good thing, sometimes you want a bit more extraction or a longer soak. With a conventional you'd have to go oops, too fast, have to grind a bit finer next cup. This one apparently you can crank it up and down to get where you need with less 'grounds' trial and error and just adjust the process on the fly really. Im wondering tho, typically in pour over, one cupper setups, the drip problem is they clog or airlock and don't drip fast enough. Does this have big 'nuff holes so you can get around that without the sharp slap on the counter with it?
